Ingredients

Scale
  • 2 large bell peppers
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 cup provolone cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  4. Add the chopped onion and cook until softened, about 5 minutes.
  5. Stir in the minced garlic, salt, black pepper, garlic powder, and onion powder. Cook for 1 minute more until fragrant.
  6. Remove the skillet from the heat. Stir in the shredded provolone and mozzarella cheeses until melted and combined.
  7. Spoon the beef and cheese mixture evenly into the prepared bell pepper halves.
  8. Place the stuffed peppers in a baking dish.
  9. Bake for 20-25 minutes, or until the peppers are tender and the cheese is golden brown and bubbly.

Notes

  • For an extra cheesy flavor, add more cheese or a blend of your favorite cheeses.
  • Feel free to add other vegetables like mushrooms or green peppers to the beef mixture.
  • Serve hot and enjoy your delicious, low-carb meal!
