3 cups cooked cold jasmine rice
1 tablespoon vegetable oil
1 cup diced cooked chicken or shrimp (or use tofu for vegetarian)
1/2 cup diced onion
1/2 cup diced carrot
1/2 cup frozen peas
1/4 cup raisins
1/2 cup fresh or canned pineapple chunks, drained
2 cloves garlic, minced
1 tablespoon fish sauce
1 teaspoon soy sauce (or tamari for gluten free)
1/2 teaspoon curry powder
1/4 teaspoon turmeric powder
1 large egg, lightly beaten
2 tablespoons chopped scallions for garnish
1/4 cup chopped roasted cashews for garnish
Instructions
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the onion and carrot; stir fry for 3 minutes until slightly soft.
Add minced garlic and cook for 30 seconds until fragrant.
Push the vegetables to one side of the wok. Pour the beaten egg into the empty space and quickly scramble until just set. Break the egg into small pieces and mix with the vegetables.
Add the cold rice, chicken or shrimp, peas, raisins, and pineapple chunks to the wok. Stir fry everything together for 3 to 4 minutes, breaking up any clumps of rice.
In a small bowl, mix together the fish sauce, soy sauce, curry powder, and turmeric powder. Pour this sauce mixture over the rice.
Stir fry constantly for another 2 minutes until the rice is heated through and evenly coated with the sauce.
Remove from heat. Stir in half of the scallions.
Serve immediately, garnished with the remaining scallions and chopped cashews. For presentation, serve inside a hollowed-out pineapple half.
Notes
Use day-old, cold rice for the best fried rice texture.
If you want a vegetarian version, substitute the chicken or shrimp with 1 cup of cubed firm tofu, pressed and lightly browned before adding the vegetables.
For a gluten free option, use tamari instead of soy sauce and confirm your fish sauce is gluten free.
