2 oz Tequila Blanco
1 oz Fresh Lime Juice
1 oz Cointreau or Triple Sec
2 oz Fresh Pineapple Juice
2 Thin Slices Fresh Jalapeño (seeds removed for less heat)
Pineapple wedge and a slice of jalapeño for garnish
Coarse Salt or Tajin for rim (optional)
Instructions
If using a rim, run a lime wedge around the edge of your glass. Roll the rim in salt or Tajin.
Place the pineapple juice and jalapeño slices into a cocktail shaker. Muddle gently just enough to release the jalapeño flavor.
Add the tequila, lime juice, and Cointreau to the shaker.
Fill the shaker with ice.
Seal the shaker and shake well until thoroughly chilled.
Double strain the mixture into your prepared glass filled with fresh ice.
