3 lbs Russet potatoes, peeled and thinly sliced
4 tablespoons unsalted butter
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 1/2 cups heavy cream
1 cup whole milk
1/2 teaspoon salt, plus more for seasoning
1/4 teaspoon black pepper
Pinch of ground nutmeg
1 cup grated Gruyere cheese
1/2 cup grated Parmesan cheese
Instructions
Preheat your oven to 375°F (190°C). Lightly butter an 8×8 inch baking dish.
Peel and thinly slice the potatoes. Aim for uniform thickness, about 1/8 inch. You can use a mandoline for best results.
In a medium saucepan over medium heat, melt the butter. Add the minced garlic and cook for one minute until fragrant. Do not let the garlic brown.
Whisk in the flour and cook for one minute, creating a roux.
Slowly whisk in the heavy cream and milk until smooth. Bring the mixture to a simmer, stirring constantly until it thickens slightly, about 3-5 minutes.
Remove the cream sauce from the heat. Stir in the 1/2 teaspoon salt, pepper, and nutmeg.
Stir in half of the Gruyere and half of the Parmesan cheese until melted and smooth. Taste the sauce and add more salt if needed.
Arrange one-third of the sliced potatoes in a single layer in the prepared baking dish. Sprinkle lightly with salt.
Pour one-third of the cheese sauce evenly over the potatoes.
Repeat the layering process two more times: potatoes, light salt, sauce.
Top the final layer of potatoes with the remaining Gruyere and Parmesan cheese.
Bake for 60 to 75 minutes, or until the potatoes are tender when pierced with a fork and the top is golden brown and bubbly.
Let the potatoes au gratin rest for 10 minutes before serving. This allows the sauce to set.
