Ingredients
Scale
1/2 cup chia seeds
2 cups unsweetened almond milk (or milk of your choice)
1/2 cup pumpkin puree (not pumpkin pie filling)
1/4 cup maple syrup (adjust to taste)
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
Pinch of salt
For layering: Greek yogurt or coconut cream
For topping: Chopped pecans or granola
Instructions
Combine chia seeds, almond milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and salt in a jar or bowl.
Whisk well immediately to prevent clumping.
Stir again after 5 minutes to break up any remaining clumps.
Cover the mixture and refrigerate for at least 4 hours, or preferably overnight, until the pudding is thick.
Once set, prepare your parfaits by layering the pumpkin chia pudding with yogurt or coconut cream in glasses.
Top with chopped pecans or granola before serving.
Notes
You can increase the maple syrup slightly if you prefer a sweeter pudding.
For a thicker pudding, use slightly less milk next time.
Use canned pumpkin puree for the best texture.
This recipe works well as a make-ahead breakfast too.
