  • 1/2 cup unpopped popcorn kernels
  • 1/4 cup pumpkin puree (not pie filling)
  • 1 tablespoon melted butter
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chipotle powder (adjust to your spice preference)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt (or to taste)
  • 1 tablespoon brown sugar (optional, for a sweet-spicy mix)

Instructions

  1. Heat the coconut oil in a large, heavy-bottomed pot over medium-high heat.
  2. Add three popcorn kernels to the oil. Cover and wait until these kernels pop. This indicates the oil is ready.
  3. Add the remaining popcorn kernels to the pot, cover, and shake the pot gently until the popping starts to slow down.
  4. Remove the pot from the heat and let it sit, covered, for 30 seconds. This allows the heat to build for maximum popping.
  5. Return the pot to medium heat and continue popping until the popping slows to several seconds between pops. Remove from heat and set aside.
  6. In a small bowl, whisk together the pumpkin puree, melted butter, smoked paprika, chipotle powder, cinnamon, nutmeg, salt, and brown sugar (if using).
  7. Place the popped popcorn in a very large bowl.
  8. Drizzle the spice mixture evenly over the popcorn.
  9. Toss immediately and thoroughly until the popcorn is evenly coated. Work quickly to prevent the puree from clumping.
  10. Spread the coated popcorn onto a baking sheet to cool slightly and crisp up before serving.

Notes

  • For a crispier coating, you can bake the coated popcorn at 250°F (120°C) for 10 minutes after tossing.
