1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 cup pumpkin puree
1/2 cup buttermilk
1 teaspoon vanilla extract
1 cup (6 ounces) chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 12-cup muffin tin or line with paper liners.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
Beat in the eggs one at a time, then stir in the pumpkin puree, buttermilk, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Gently fold in the chocolate chips.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 20-25 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For even distribution of chocolate chips, you can toss them with a tablespoon of the flour mixture before adding them to the batter.
You can add chopped nuts like walnuts or pecans along with the chocolate chips for extra texture.
If you don’t have buttermilk, you can make your own by mixing 1/2 cup of milk with 1/2 tablespoon of lemon juice or white vinegar and letting it sit for 5-10 minutes.
