For the Crust:
1 ½ cups graham cracker crumbs
⅓ cup unsalted butter, melted
2 tablespoons granulated sugar
For the Cheesecake Layer:
24 ounces cream cheese, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
For the Pumpkin Pie Layer:
15 ounces pumpkin puree
½ cup packed brown sugar
1 teaspoon pumpkin pie spice
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
2 large eggs
½ cup evaporated milk
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined. Press the mixture evenly into the bottom of the prepared pan. Bake for 8-10 minutes, then remove from oven and let cool slightly.
Prepare the cheesecake layer: In a large bowl, beat the softened cream cheese and ¾ cup of granulated sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract. Pour this mixture evenly over the cooled crust.
Prepare the pumpkin pie layer: In a separate bowl, whisk together pumpkin puree, brown sugar, pumpkin pie spice, cinnamon, and ginger. Beat in the 2 eggs one at a time. Stir in the evaporated milk.
Carefully pour the pumpkin pie mixture over the cheesecake layer, spreading it gently to cover the entire surface.
Bake for 35-45 minutes, or until the edges are set and the center is mostly set but still has a slight Jiggle.
Let the bars cool completely in the pan on a wire rack.
Once cooled, cover and refrigerate for at least 4 hours, or preferably overnight, to allow them to set fully.
Lift the bars out of the pan using the parchment paper overhang. Cut into squares and serve.
Notes
Ensure your cream cheese is fully softened for a smooth cheesecake layer.
Do not overmix the cheesecake batter once the eggs are added.
