- 1/2 cup rolled oats
- 1 cup milk (dairy or non-dairy)
- 1/4 cup pumpkin puree
- 1 tablespoon chia seeds
- 1 tablespoon maple syrup
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon vanilla extract
- Pinch of salt
- Optional toppings: chopped nuts, seeds, extra maple syrup
- In a jar or container, combine rolled oats, milk, pumpkin puree, chia seeds, maple syrup, pumpkin pie spice, vanilla extract, and salt.
- Stir everything together until well combined.
- Cover the container and refrigerate for at least 4 hours, or preferably overnight.
- In the morning, stir the oats. If they are too thick, add a splash more milk.
- Add your favorite toppings and enjoy!

- For a creamier texture, use full-fat milk or add a tablespoon of Greek yogurt.
- Adjust the sweetness to your preference by adding more or less maple syrup.
