  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine
  • 4 cups hot vegetable broth (or chicken broth)
  • 1 cup pumpkin puree (not pie filling)
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons unsalted butter
  • 1 teaspoon fresh sage, finely chopped
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the Arborio rice to the pot. Stir constantly for 2 minutes to toast the grains lightly.
  4. Pour in the white wine. Stir until the wine is completely absorbed by the rice.
  5. Ladle in one cup of the hot broth. Stir constantly until the liquid is absorbed. Continue adding the broth, one cup at a time, stirring frequently and waiting until each addition is nearly absorbed before adding the next. This process takes about 20 to 25 minutes.
  6. When the rice is creamy but still has a slight bite (al dente), stir in the pumpkin puree and the chopped fresh sage. Mix well.
  7. Remove the pot from the heat. Stir in the butter and the 1/2 cup of Parmesan cheese until the risotto is smooth and creamy. You may need to add a splash more broth if it seems too thick.
  8. Season generously with salt and pepper to your taste.
  9. Serve immediately in warm bowls, topping each serving with extra grated Parmesan cheese.
