1 teaspoon baking soda
0.5 teaspoon baking powder
1 teaspoon ground cinnamon
0.5 teaspoon ground nutmeg
0.5 teaspoon ground ginger
0.25 teaspoon ground cloves
1 teaspoon salt
1 cup pumpkin puree
1.25 cups milk
1 large egg
2 tablespoons melted unsalted butter
1 tablespoon maple syrup
1 teaspoon vanilla extract

Instructions
In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
In a separate medium bowl, whisk together the pumpkin puree, milk, egg, melted butter, maple syrup, and vanilla extract until well combined. If using, stir in the chia seeds.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Heat a lightly oiled griddle or frying pan over medium heat.
Pour about 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2-3 minutes per side, or until golden brown and cooked through.
