Make easy, no-bake crispy cereal bars flavored with pumpkin puree and warm autumn spices.

  • 6 cups Rice Krispies cereal
  • 1 (10 ounce) package marshmallows
  • 4 tablespoons unsalted butter
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt

Instructions

  1. Lightly grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a large saucepan, melt the butter over low heat.
  3. Add the marshmallows to the melted butter and stir constantly until completely melted and smooth. Remove the pan from the heat.
  4. Stir in the pumpkin puree, pumpkin pie spice, and salt until fully combined with the marshmallow mixture.
  5. Quickly add the Rice Krispies cereal to the marshmallow mixture. Fold gently until the cereal is evenly coated.
  6. Press the mixture evenly into the prepared baking pan using a lightly buttered spatula or wax paper. Do not pack too tightly.
  7. Let the treats cool and set completely at room temperature for about 1 hour before cutting into squares.

Notes

  • For a richer flavor, use brown butter instead of regular melted butter.
  • If you do not have pumpkin pie spice, mix 1 teaspoon cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, and a pinch of ground cloves.
  • Store the finished treats in an airtight container at room temperature for up to three days.
