Ingredients
Scale
1 3/4 cups all-purpose flour
2 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 cup pumpkin puree (not pumpkin pie filling)
1 cup milk
2 large eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
Instructions
Preheat your waffle iron according to the manufacturer’s directions. Lightly grease the plates if necessary.
In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
In a separate medium bowl, whisk together the pumpkin puree, milk, eggs, vegetable oil, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine for fluffy waffles.
Pour the batter onto the hot waffle iron, using the amount recommended for your specific iron size.
Cook until the waffle is golden brown and crisp, usually 4 to 6 minutes, depending on your iron.
Remove the waffle and repeat with the remaining batter. Serve immediately with your favorite toppings.
Notes
For extra crispy waffles, let the cooked waffles sit on a wire rack in a single layer in a warm oven (about 200°F) while you finish cooking the rest of the batch.
You can substitute whole wheat flour for up to half of the all-purpose flour for a slightly healthier version.
Make a brown butter maple syrup topping by melting 4 tablespoons of butter until it browns slightly, then whisk in 1/2 cup of maple syrup.
