  • 1 cup chicken broth
  • 1 packet taco seasoning (or 2 tbsp homemade mix)
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 cup water
  • Corn tortillas
  • Toppings: Chopped onion, cilantro, lime wedges

Instructions

  1. Place the chicken breasts in a large skillet or pot.
  2. Pour the chicken broth over the chicken.
  3. Sprinkle the taco seasoning, cumin, and chili powder evenly over the chicken.
  4. Add the 1/4 cup of water to the pot.
  5. Bring the liquid to a simmer over medium-high heat.
  6. Reduce heat to low, cover the pot, and cook for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F.
  7. Remove the chicken from the pot and place it on a cutting board.
  8. Use two forks to shred the chicken completely.
  9. Return the shredded chicken to the pot and toss it well with the remaining cooking liquid to coat and moisten.
  10. Warm the corn tortillas on a dry skillet over medium heat until soft and pliable.
  11. Fill each tortilla with the shredded chicken.
  12. Top immediately with fresh onion, cilantro, and a squeeze of fresh lime juice.

Notes

  • For a hands-off method, place all ingredients except tortillas and toppings in a slow cooker. Cook on LOW for 4 hours or HIGH for 2 hours. Shred the chicken directly in the cooker.
