1 tablespoon olive oil
1 pound raw shrimp, peeled and deveined
2 cloves garlic, minced
1/2 teaspoon chili powder
1/4 teaspoon cumin
Salt and pepper to taste
8 medium flour tortillas
1 1/2 cups shredded Monterey Jack cheese
1/2 cup shredded cheddar cheese
2 tablespoons butter
1 lime, juiced
Instructions
Heat olive oil in a skillet over medium heat. Add shrimp, garlic, chili powder, cumin, salt, and pepper. Cook for 2-3 minutes per side until pink and cooked through. Remove shrimp from the skillet and set aside. Squeeze lime juice over the cooked shrimp.
Wipe the skillet clean. Add butter to the skillet over medium heat. Place one tortilla in the skillet.
Sprinkle half of the tortilla with the cheese mixture, then top with half of the cooked shrimp. Fold the other half of the tortilla over the filling.
Cook for 2-3 minutes per side until the tortilla is golden brown and the cheese is melted. Press down gently with a spatula while cooking to help it crisp.
Remove the first quesadilla and repeat the process with the remaining ingredients to make the second quesadilla.
Cut each quesadilla into wedges and serve immediately.
Notes
For extra flavor, add a pinch of smoked paprika to the shrimp seasoning.
Use a large, heavy-bottomed skillet for the best crisping results.
Serve with salsa, sour cream, or guacamole for dipping.
