  • 2 cups Vegetable Broth or water
  • 1 cup Cooked Black Beans, rinsed and drained
  • 1 cup Roasted Sweet Potato, cubed
  • 1 cup Steamed Broccoli florets
  • 1/2 cup Corn kernels (fresh or frozen)
  • 1/4 cup Red Onion, finely chopped
  • 2 tablespoons Fresh Cilantro, chopped
  • 1/4 cup Lime Juice (about 2 limes)
  • 2 tablespoons Olive Oil
  • 1 teaspoon Cumin
  • 1/2 teaspoon Chili Powder
  • Salt and Black Pepper to taste

Instructions

  1. Rinse the quinoa well under cold water.
  2. Combine the rinsed quinoa and vegetable broth in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork and set aside.
  3. While the quinoa cooks, prepare the dressing: Whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper in a small bowl.
  4. In a large bowl, combine the warm, cooked quinoa, black beans, roasted sweet potato, broccoli, corn, and red onion.
