8 sheets Rice Paper
1/2 cup Cooked Vermicelli Noodles
1/4 cup Shredded Carrot
1/4 cup Thinly Sliced Red Cabbage
1/4 cup Thinly Sliced Yellow Bell Pepper
1/4 cup Fresh Mint Leaves
1/4 cup Fresh Cilantro Leaves
4 oz Cooked Shrimp or Tofu (optional)
Water for soaking
Instructions
Fill a shallow dish with warm water.
Quickly dip one rice paper sheet into the water for about 15-20 seconds until pliable. Do not oversoak.
Lay the softened rice paper flat on a clean, damp surface or cutting board.
Arrange a small line of vermicelli noodles, shredded carrot, red cabbage, and bell pepper across the center of the bottom third of the wrapper.
If using, place a few pieces of shrimp or tofu on top of the vegetables.
Top with mint and cilantro leaves.
Fold the bottom edge up and over the filling.
Fold in both sides of the wrapper towards the center.
Roll the wrapper up tightly to seal the roll.
Repeat with remaining ingredients.
Serve immediately with your favorite dipping sauce.
Notes
Chef Tariq suggests soaking the rice paper just long enough so it is pliable but still slightly firm; it will continue to soften as you roll.
Amara recommends serving these with a peanut dipping sauce or a light soy-ginger dressing for extra flavor.
