A layered pasta salad recipe packed in jars, featuring a variety of colorful vegetables for healthy, make-ahead lunches.

  • 1 cup small pasta (rotini or bowtie)
  • 1/4 cup Lemon Herb Vinaigrette
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup chopped orange bell pepper
  • 1/2 cup shredded carrots
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped broccoli florets
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped purple cabbage
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Cook pasta according to package directions until al dente. Drain and rinse immediately with cold water to stop cooking. Toss the cooled pasta with half of the Lemon Herb Vinaigrette.
  2. Prepare the Lemon Herb Vinaigrette by whisking together 1/4 cup olive oil, 2 tablespoons fresh lemon juice, 1 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  3. To assemble the jars, place the dressing at the bottom of two wide-mouth quart-sized jars.
  4. Layer the ingredients starting with the hardest, non-absorbent items directly above the dressing: place the broccoli florets and red onion next.
  5. Add the next layer of vegetables: carrots and orange bell pepper.
  6. Add the tomatoes and cucumber.
  7. Add the dressed pasta layer on top of the vegetables.
  8. Top the pasta with the purple cabbage and feta cheese, if using.
  9. Seal the jars tightly and refrigerate for up to 4 days. When ready to eat, shake the jar well or pour the contents into a bowl to distribute the dressing.

Notes

  • Layering order is important: dressing first, then hard vegetables, then pasta, then soft greens/toppings. This keeps the pasta from getting soggy.
  • Use different colored vegetables like yellow bell pepper or radishes to increase the rainbow effect.
  • If you do not want to use cheese, substitute with 1/4 cup toasted sunflower seeds for crunch.
