12 rice paper wrappers
1 cup shredded carrots
1 cup shredded red cabbage
1 cup thinly sliced yellow bell pepper
1 cup thinly sliced cucumber
1 cup fresh spinach leaves

1/2 cup fresh mint sprigs
8 ounces firm tofu, pressed and cut into thin strips (optional)
For the Peanut Dipping Sauce:
1/2 cup creamy peanut butter
1/4 cup warm water
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon rice vinegar
1 tablespoon honey or maple syrup
1 teaspoon sesame oil
1 clove garlic, minced
1/2 teaspoon grated fresh ginger
Pinch of red pepper flakes (optional)
Instructions
Prepare the Peanut Dipping Sauce: In a medium bowl, whisk together peanut butter, warm water, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, minced garlic, grated ginger, and red pepper flakes (if using) until smooth and well combined. Set aside.
Prepare the Vegetables: Ensure all vegetables are washed, dried, and thinly sliced or shredded for easy rolling. If using tofu, pan-fry or bake the strips until lightly golden.
Assemble the Spring Rolls: Fill a shallow dish or pie plate with warm water. Dip one rice paper wrapper into the water for about 20-30 seconds, or until pliable but not too soft.
Carefully lay the wrapper flat on a clean, damp surface.
Arrange a small amount of each filling ingredient (carrots, cabbage, bell pepper, cucumber, spinach, cilantro, mint, and tofu if using) in the center of the wrapper, leaving some space on the sides.
Fold the bottom edge of the wrapper over the filling.
Fold the sides inward.
Tightly roll the wrapper from the bottom up to create a compact spring roll.
Repeat with the remaining wrappers and filling.
Serve: Arrange the spring rolls on a platter and serve immediately with the prepared peanut dipping sauce.
Notes
For a gluten-free option, use tamari instead of soy sauce.
Feel free to add other vegetables like avocado, bean sprouts, or shredded lettuce.
If the peanut sauce is too thick, add a little more warm water, one teaspoon at a time, until you reach your desired consistency.
