  • 1 cup buttermilk
  • 1/2 cup vegetable oil

  • 1/2 cup raspberry puree

  • 1 cup fresh raspberries (for filling)
  • For Rose Buttercream: 1 cup unsalted butter (softened), 4 cups powdered sugar, 1 teaspoon rose water, 1 tablespoon milk, pink food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk the eggs, buttermilk, oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing on low speed until just combined.
  5. Slowly pour in the hot coffee, mixing until the batter is smooth. Be careful not to overmix.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  9. While the cakes cool, prepare the rose buttercream: Beat the softened butter until creamy. Gradually add the powdered sugar. Mix in the rose water and milk until light and fluffy. Add a drop of pink food coloring if desired.
  10. Once the cakes are cool, gently whisk the 1/2 cup raspberry puree into about half of the buttercream for the filling.
  11. Place one cake layer on a serving plate. Spread the raspberry rose buttercream evenly over the layer. Sprinkle fresh raspberries over the filling.
  12. Top with the second cake layer. Frost the top and sides of the cake with the remaining plain rose buttercream.
  13. Decorate with fresh raspberries or edible rose petals before serving.
