You need this quick, crunchy raw carrot salad recipe. It is inspired by the viral TikTok trend and features ribbons of fresh carrot tossed in a bright, tangy Asian-inspired dressing. It is ready in under 10 minutes and makes a fantastic healthy side dish.

Ingredients

Scale
  • 4 large carrots, peeled
  • 2 tablespoons fresh lime juice
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon toasted sesame seeds
  • 1 green onion, thinly sliced (for garnish)

Instructions

  1. Prepare the carrots: Use a vegetable peeler to shave the carrots into long, thin ribbons. Stop peeling when you reach the core. Discard the core pieces.
  2. Combine the dressing ingredients: In a small bowl, whisk together the lime juice, soy sauce, sesame oil, honey (or maple syrup), Dijon mustard, and red pepper flakes, if using. Mix until the dressing is well combined.
  3. Dress the carrots: Place the carrot ribbons in a medium mixing bowl. Pour the dressing over the ribbons.
  4. Toss well: Use tongs or your hands to gently toss the carrot ribbons until they are evenly coated with the dressing.
  5. Finish and serve: Sprinkle the toasted sesame seeds over the salad. Garnish with the sliced green onion. Serve this crunchy fresh salad immediately for the best texture.

Notes

  • For the best ribbon texture, use a standard vegetable peeler and work slowly down the length of the carrot.
  • If you want a slightly softer texture, let the dressed salad sit for 5 minutes before serving. This allows the acid in the lime juice to slightly tenderize the carrots.
  • This salad is excellent for meal prep; store the carrots and dressing separately and combine just before eating to maintain maximum crunch.
  • Add a small amount of grated fresh ginger to the dressing for an extra layer of flavor.
