1 head cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon smoked paprika
Salt and pepper to taste
1 cup cooked brown rice (or grain of choice)
1/2 cup black beans, rinsed and drained
1/2 cup corn kernels (fresh or frozen)
1/4 cup chopped fresh cilantro
1 lime, cut into wedges
Optional toppings: Salsa, avocado, Greek yogurt or sour cream
Instructions
Preheat your oven to 400°F (200°C).
In a bowl, toss the cauliflower florets with olive oil, chili powder, cumin, smoked paprika, salt, and pepper until evenly coated.
Spread the seasoned cauliflower in a single layer on a baking sheet.
Roast for 20 to 25 minutes, flipping halfway through, until the cauliflower is tender and slightly caramelized.
While the cauliflower roasts, prepare your remaining bowl components.
To assemble your one-pot lunch, layer the cooked rice in the bottom of your bowl.
Top the rice with the roasted cauliflower, black beans, and corn.
Sprinkle with fresh cilantro.
Serve immediately with salsa, avocado, and a squeeze of fresh lime juice.
