This recipe provides instructions for quickly sautéing zucchini, mushrooms, and onions with garlic and thyme to create a flavorful vegetable side dish.

  • 2 medium zucchini, sliced into 1/4-inch thick rounds
  • 8 ounces cremini mushrooms, sliced
  • 1 medium yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sliced onion to the skillet and cook for 3 minutes until it begins to soften.
  3. Add the sliced mushrooms to the skillet. Cook for 5 to 7 minutes, stirring occasionally, until the mushrooms release their liquid and start to brown.
  4. Add the zucchini slices to the skillet. Continue to cook for another 4 to 6 minutes, stirring occasionally, until the zucchini is tender-crisp.
  5. Stir in the minced garlic and fresh thyme. Cook for 1 minute until the garlic is fragrant.
  6. Season with salt and pepper. Stir everything together and serve immediately.

Notes

  • Do not overcrowd the pan; cook in batches if necessary to ensure the vegetables sauté rather than steam.
  • For best texture, cook the mushrooms first until they brown before adding the zucchini.
