1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (optional, for a little kick)
8 tablespoons (1 stick) cold unsalted butter, cut into small cubes
4 ounces sharp cheddar cheese, finely grated
2 tablespoons cold water
1 large egg, beaten (for egg wash)
1 teaspoon dried herbs (like thyme or oregano)
Coarse salt for sprinkling
Instructions
In a large bowl, whisk together the flour, salt, and cayenne pepper.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Stir in the grated cheddar cheese until just combined.
Add the cold water, one tablespoon at a time, mixing until the dough just comes together. Do not overwork the dough.
Form the dough into a flat disk, wrap it in plastic wrap, and chill it in the refrigerator for at least 30 minutes.
Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
On a lightly floured surface, roll the chilled dough out to about 1/8-inch thickness.
Cut the dough into long, narrow strips, about 1/2 inch wide. You can twist each strip gently for a spiral effect.
Place the strips on the prepared baking sheets.
Brush the tops lightly with the beaten egg wash.
Sprinkle evenly with dried herbs and coarse salt.
Bake for 12 to 15 minutes, or until the straws are golden brown and crisp.
Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Using very cold butter is key to flaky layers.
If you prefer a milder flavor, use mild or medium cheddar instead of sharp.
