  • 1 cup sliced mushrooms
  • 1/2 cup chopped spinach
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a medium saucepan, combine steel-cut oats, vegetable broth, water, salt, and pepper.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for 20-30 minutes, or until oats are tender and liquid is absorbed. Stir occasionally.
