Instructions
Combine the rinsed quinoa and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork and set aside.
While the quinoa cooks, heat the olive oil in a skillet over medium heat. Add the shallot and cook until softened, about 3 minutes.
Add the diced butternut squash to the skillet. Cook for 5-7 minutes, stirring occasionally, until the squash starts to become tender.
Stir in the minced garlic, smoked paprika, and dried thyme. Cook for 1 minute until fragrant.
