  • 1 pound Brussels sprouts, trimmed and shaved
  • 2 crisp apples (like Honeycrisp or Granny Smith), cored and thinly sliced or diced
  • 1/4 cup toasted pecans or walnuts
  • 1/4 cup dried cranberries or cherries
  • For the Vinaigrette:
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon maple syrup (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together the apple cider vinegar and Dijon mustard. Slowly drizzle in the olive oil while whisking continuously until the dressing emulsifies. Stir in the maple syrup, salt, and pepper.
  2. Shave the Brussels sprouts very thinly. You can use a mandoline or a sharp knife for this. Place the shaved sprouts in a large mixing bowl.
  3. Add the sliced or diced apples, toasted nuts, and dried fruit to the bowl with the Brussels sprouts.
  4. Pour about two-thirds of the vinaigrette over the salad ingredients.
  5. Toss everything gently until the salad is evenly coated. Taste a bite and add more dressing if needed.
  6. Serve immediately for the best texture.

Notes

  • For the best texture, shave the Brussels sprouts just before assembling the salad.
  • If you do not have toasted nuts, quickly toast raw nuts in a dry skillet over medium heat until fragrant, watching closely so they do not burn.
