  • 1.5 pounds boneless, skinless chicken breasts, cut into thin strips
  • 2 bell peppers (any color), sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 8-10 large flour tortillas
  • 1.5 cups shredded Monterey Jack cheese
  • 1.5 cups shredded cheddar cheese
  • Optional toppings: salsa, sour cream, guacamole, chopped cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken strips, sliced bell peppers, and sliced onion with olive oil.
  3. Add the chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Toss to coat everything evenly.
  4. Spread the chicken and vegetable mixture in a single layer on a large baking sheet.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp, stirring halfway through.
  6. Warm the tortillas according to package directions.
  7. To assemble the quesadillas, lay out a tortilla. Spoon a portion of the chicken and vegetable mixture onto one half of the tortilla.
  8. Sprinkle with shredded Monterey Jack and cheddar cheeses.
  9. Fold the tortilla in half.
  10. Place the folded quesadillas back onto the baking sheet.
  11. Bake for another 5-7 minutes, or until the cheese is melted and bubbly and the quesadillas are lightly golden.
  12. Cut into wedges and serve immediately with your favorite toppings.

Notes

  • For extra flavor, you can add a squeeze of lime juice to the chicken and vegetables before baking.
  • If you don’t have all the spices, use a fajita seasoning blend.
