Make breakfast simple for the whole family with these easy sheet pan pancakes. You skip the messy flipping and cook a large batch all at once. Use your favorite scratch recipe or a store-bought mix for maximum convenience.

Ingredients

Scale
  • 2 cups all-purpose flour (or 2 cups pancake mix, like Kodiak Cakes)
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 4 tablespoons granulated sugar
  • 2 large eggs
  • 2 cups milk
  • 4 tablespoons melted butter, plus extra for greasing
  • Optional Mix-ins: 1 cup blueberries, chocolate chips, or cooked crumbled sausage and shredded cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Grease a standard 13×18 inch sheet pan generously with butter or cooking spray.
  3. In a large bowl, whisk together the flour, baking powder, salt, and sugar if making from scratch. If using a mix, skip this step.
  4. In a separate bowl, whisk the eggs, milk, and melted butter until combined.
  5. Pour the wet ingredients into the dry ingredients. Whisk until just combined. Do not overmix; a few lumps are fine. If using a mix, follow the package instructions for liquid amounts, then mix.
  6. Carefully pour the batter onto the prepared sheet pan, spreading it evenly with a spatula.
  7. If you want mix-ins, gently sprinkle blueberries, chocolate chips, or savory items over the top of the batter now.
  8. Bake for 15 to 20 minutes, or until the edges are set and a toothpick inserted into the center comes out clean. The top should look set and slightly golden.
  9. Remove from the oven. Let it cool for a few minutes before slicing into squares or serving directly from the pan.

Notes

  • For a softer, fluffier result, use whole milk and melted, slightly cooled butter.
  • If you are using savory items like sausage, make sure they are fully cooked and crumbled before adding them to the batter.
  • Serving the pancakes directly from the pan keeps them warm longer for large groups.
  • This recipe is great for meal prepping; leftovers reheat well in a toaster oven.
