  • 1 pound large shrimp, peeled and deveined
  • 1 pound small red potatoes, quartered
  • 2 ears of corn, husked and cut into 2-inch pieces
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons lemon juice
  • 1 teaspoon Old Bay Seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and black pepper to taste
  • Optional: Smoked sausage, quartered

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Tear off four large sheets of aluminum foil.
  3. Divide the potatoes, corn, and shrimp evenly among the foil sheets, placing them in the center. If using sausage, add it now.
  4. In a small bowl, whisk together the melted butter, lemon juice, Old Bay Seasoning, garlic powder, and paprika.
  5. Pour the butter mixture evenly over the ingredients in each foil packet. Season with salt and pepper.
  6. Fold the foil packets tightly to seal, ensuring no steam can escape.
  7. Grill or bake for 15-20 minutes, or until the shrimp are pink and cooked through, and the potatoes are tender.
  8. Carefully open the packets and serve hot.

Notes

  • For extra flavor, consider adding sliced kielbasa or andouille sausage to the packets.
  • Adjust the spice level by adding more or less Old Bay Seasoning.
  • Ensure the foil packets are sealed completely to trap the steam and cook the ingredients evenly.
