Ingredients
Scale
1 lb large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon salt
2 cups cooked brown rice
1 cup corn kernels (fresh or frozen)
1 cup black beans, rinsed and drained
1 ripe avocado, diced
1/2 cup chopped cilantro
For the Sauce: 1/4 cup plain Greek yogurt
2 tablespoons lime juice
1 clove garlic, minced
1 tablespoon olive oil
1/4 teaspoon salt
Instructions
In a bowl, toss the shrimp with 1 tablespoon olive oil, chili powder, cumin, and 1/4 teaspoon salt.
Heat a grill or grill pan to medium-high heat. Grill the shrimp for 2-3 minutes per side until pink and cooked through. Set aside.
Prepare the sauce: Whisk together Greek yogurt, lime juice, minced garlic, 1 tablespoon olive oil, and 1/4 teaspoon salt in a small bowl.
Assemble the bowls: Divide the cooked brown rice among four bowls.
Top the rice evenly with the grilled shrimp, corn, black beans, diced avocado, and cilantro.
Drizzle the garlic lime sauce over the ingredients in each bowl before serving.
Notes
For meal prep, store the sauce separately and add it just before eating to keep the vegetables crisp.
You can substitute brown rice with quinoa or cauliflower rice for a lower carbohydrate option.
If you prefer a spicier sauce, add a dash of hot sauce to the yogurt mixture.
