  • 1 pound raw shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 3 cups cold, cooked day-old rice
  • 1 cup frozen peas and carrots mix
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon oyster sauce (optional, for deeper flavor)
  • 1 teaspoon toasted sesame oil
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add shrimp and cook for 2-3 minutes until pink and opaque. Remove shrimp and set aside.
  3. Add garlic and ginger to the skillet; cook for 30 seconds until fragrant.
  4. Pour in the beaten eggs. Scramble quickly until just set, then break into small pieces.
  5. Add the cold rice to the skillet. Break up any clumps with your spatula. Stir-fry for 3-4 minutes until heated through.
  6. Stir in the frozen peas and carrots mix. Cook until vegetables are tender-crisp, about 2 minutes.
  7. Return the cooked shrimp to the pan.
  8. Pour soy sauce and oyster sauce (if using) over the rice mixture. Toss everything together quickly to coat evenly.
  9. Remove from heat. Drizzle with toasted sesame oil and toss one last time.
