Follow these easy steps to make tender, slightly caramelized zucchini spears using your oven.

Ingredients

  • 3 medium zucchini
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Wash the zucchini and trim off the ends.
  3. Cut each zucchini lengthwise into quarters, then cut those quarters into spear shapes, about 3 to 4 inches long.
  4. Place the zucchini spears in a large bowl.
  5. Drizzle the olive oil over the spears. Add the salt, pepper, and garlic powder. Toss everything together until the zucchini is evenly coated.
  6. Spread the seasoned zucchini spears in a single layer on a baking sheet. Do not overlap them.
  7. Roast for 15 to 20 minutes, flipping the spears halfway through the cooking time.
  8. Remove from the oven when the zucchini is tender and the edges show light browning. Serve immediately.

Notes

  • For crispier spears, use parchment paper on your baking sheet and roast at 425 degrees Fahrenheit for 18 minutes.
  • Do not overcrowd the baking sheet; use two sheets if necessary to allow the moisture to escape.
  • If you prefer fresh garlic, substitute 1 teaspoon of minced fresh garlic for the garlic powder, but add it during the last 5 minutes of roasting to prevent burning.
