1 pound rice noodles
1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
1/2 pound large shrimp, peeled and deveined
2 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon curry powder
1 teaspoon sugar
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper (optional)
2 tablespoons vegetable oil
1 large onion, thinly sliced
3 cloves garlic, minced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 cup bean sprouts
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh basil
Lime wedges, for serving
Instructions
In a bowl, combine chicken, soy sauce, fish sauce, curry powder, sugar, turmeric, and cayenne pepper (if using). Toss to coat and let marinate for at least 15 minutes.
Cook rice noodles according to package directions. Drain and set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Add onion and garlic to the skillet and stir-fry until softened, about 2-3 minutes.
Add red and green bell peppers and stir-fry until tender-crisp, about 3-4 minutes.
Return the cooked chicken to the skillet. Add the cooked rice noodles and shrimp. Stir-fry for 2-3 minutes, until the shrimp are pink and cooked through.
Add bean sprouts, cilantro, and basil. Toss everything together until well combined and heated through.
Serve immediately with lime wedges.
Notes
For a vegetarian option, omit the chicken and shrimp and add firm tofu or mixed vegetables like broccoli and carrots.
Adjust the curry powder and cayenne pepper to your preferred spice level.
You can use any pasta you like if rice noodles are unavailable.
