Ingredients

Scale
  • 1 pound skirt or flank steak, thinly sliced against the grain
  • 1 tablespoon olive oil
  • 1 large onion, cut into strips
  • 2 bell peppers (any color), cut into strips
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 8 small flour tortillas
  • Optional toppings: salsa, sour cream, guacamole, lime wedges

Instructions

  1. In a bowl, toss the sliced steak with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the seasoned steak to the hot skillet in a single layer. Sear for 2-3 minutes per side until browned. You may need to work in batches to avoid overcrowding the pan. Remove the steak and set it aside.
  4. Add the onion and bell pepper strips to the same skillet. Cook, stirring occasionally, for 5-7 minutes until they soften and start to char slightly.
  5. Return the steak to the skillet with the vegetables. Toss everything together for 1 minute to heat through.
  6. Warm the tortillas according to package directions (you can warm them directly on a dry skillet).
  7. Serve the steak and vegetable mixture immediately in the warm tortillas. Offer your favorite toppings on the side.

Notes

  • Slicing the steak thinly against the grain makes it tender for quick cooking.
  • Do not overcrowd the skillet when searing the steak; this ensures a good sear instead of steaming the meat.
  • You can add a squeeze of fresh lime juice over the finished fajitas for extra brightness.
