3-4 pound beef brisket
1 large onion, sliced
4 cloves garlic, minced
1 cup beef broth
1/2 cup Worcestershire sauce
2 tablespoons brown sugar
1 tablespoon smoked paprika
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon dried thyme
Instructions
Place the sliced onion in the bottom of your slow cooker.
Season the brisket generously with salt, pepper, smoked paprika, and thyme.
Place the seasoned brisket on top of the onions.
In a bowl, whisk together the beef broth, Worcestershire sauce, and brown sugar.
Pour the liquid mixture over the brisket.
Add the minced garlic around the brisket.
Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the brisket is fork-tender.
Remove the brisket from the slow cooker and let it rest for 10-15 minutes before slicing.
Skim any excess fat from the cooking liquid. You can thicken the liquid with a cornstarch slurry (2 tablespoons cornstarch mixed with 2 tablespoons water) if desired, to create a gravy.
Slice the brisket against the grain and serve with the gravy.

For a BBQ flavor, you can add your favorite BBQ sauce to the liquid mixture.
