Easy Slow Cooker Beef Stew

Make tender beef and vegetables with this simple, set-it-and-forget-it slow cooker beef stew recipe. This is a hearty, low-effort dinner.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 carrots, peeled and cut into 1-inch pieces
  • 3 celery stalks, cut into 1-inch pieces
  • 1 pound potatoes (Yukon Gold or Russet), peeled and quartered
  • 4 cups beef broth
  • 1/2 cup dry red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch mixed with 3 tablespoons cold water (for slurry)

Instructions

  1. Place the beef cubes, onion, carrots, celery, and potatoes into the basin of your slow cooker.
  2. In a separate bowl, whisk together the beef broth, red wine (if using), Worcestershire sauce, thyme, rosemary, bay leaves, salt, and pepper.
  3. Pour the liquid mixture over the beef and vegetables in the slow cooker. Stir gently to combine.
  4. Cover the slow cooker and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours, until the beef is very tender.
  5. About 30 minutes before serving, remove the bay leaves. Stir the cornstarch and cold water mixture (slurry) into the stew.
  6. Cover and cook on HIGH for another 20 to 30 minutes, or until the stew has thickened to your liking.
  7. Taste and adjust seasoning if needed before serving.

Notes

  • For deeper flavor, you can brown the beef cubes in a skillet before adding them to the slow cooker.
  • If you skip the wine, add an extra 1/2 cup of beef broth.
  • If the stew is too thick after adding the slurry, stir in a little extra broth or water until you reach the desired consistency.
