  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1.5 pounds potatoes, peeled and cut into 1-inch chunks
  • 1 pound carrots, peeled and cut into 1-inch chunks
  • 1/2 cup frozen peas (optional)
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (for thickening, optional)

Instructions

  1. In a bowl, toss beef cubes with flour, salt, and pepper until evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat. Brown beef in batches, then transfer to the slow cooker.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
  4. Transfer the onion and garlic mixture to the slow cooker.
  5. Pour in beef broth and Worcestershire sauce. Add thyme and rosemary. Stir to combine.
  6. Add potatoes and carrots to the slow cooker.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef and vegetables are tender.
  8. If using, stir in frozen peas during the last 30 minutes of cooking.
  9. If you prefer a thicker stew, stir in the cornstarch slurry during the last 30 minutes of cooking and cook until thickened.
  10. Serve hot.

Notes

  • For richer flavor, you can sear the beef in batches before adding to the slow cooker.
  • Adjust seasonings to your preference.
