Hearty Slow Cooker Ham and White Bean Soup

Make a filling, flavorful ham and white bean soup using a slow cooker. This recipe uses a smoked ham hock for deep flavor.

  • 1 pound dried navy or great northern beans, rinsed and picked over
  • 1 smoked ham hock or 1 cup diced leftover ham
  • 6 cups chicken broth
  • 1 large yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Place the rinsed beans, ham hock (or diced ham), chicken broth, onion, carrots, celery, garlic, thyme, bay leaf, and pepper into your slow cooker.
  2. Cover the slow cooker and cook on low for 7 to 8 hours, or on high for 3 to 4 hours, until the beans are tender.
  3. Remove the ham hock. Discard the bone and skin. Shred any usable meat from the hock and return the meat to the soup. If using diced ham, skip this step.
  4. Remove and discard the bay leaf.
  5. Taste the soup and add salt if needed, as the ham hock provides much of the saltiness.
  6. Ladle the soup into bowls and garnish each serving with fresh parsley.

Notes

  • If you prefer a thicker soup, remove about 1 cup of the cooked beans and mash them, then stir the mash back into the soup before serving.
  • For a quicker stovetop version, combine all ingredients in a large pot, bring to a boil, then reduce heat, cover, and simmer for 1.5 to 2 hours until beans are tender.
  • If you do not have a ham hock, use 1 teaspoon of liquid smoke for a smoky flavor substitute.
