- 1 large cucumber
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon chili oil (or to taste)
- 1/2 teaspoon sugar
- Pinch of red pepper flakes (optional)
- Sesame seeds for garnish
- Wash and thinly slice the cucumber. You can smash it with the flat side of a knife before slicing for extra texture.
- In a small bowl, whisk together the minced garlic, soy sauce, rice vinegar, sesame oil, chili oil, sugar, and red pepper flakes (if using).
- Place the sliced cucumber in a serving bowl.
- Pour the dressing over the cucumbers and toss gently to coat.
- Garnish with sesame seeds before serving.
Notes
- For a spicier salad, add more chili oil or red pepper flakes.
- You can adjust the sweetness and tanginess by modifying the sugar and rice vinegar.
- This salad is best served immediately for maximum crispness.
