1 large onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can diced tomatoes, undrained
1 (15 ounce) can tomato sauce
1 cup vegetable broth
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)

Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the onion and bell pepper. Cook until softened, about 5 to 7 minutes.
Stir in the minced garlic, chili powder, cumin, and smoked paprika. Cook for one minute until fragrant.
Add the rinsed black beans, diced tomatoes, tomato sauce, and vegetable broth to the pot.
Bring the mixture to a simmer. Reduce heat to low, cover, and let the chili cook for at least 30 minutes, stirring occasionally. This allows the flavors to blend deeply.
