  • 1 tablespoon Olive oil
  • 1 cup Sliced mushrooms

  • 1/2 cup Chicken broth
  • 1/2 cup Heavy cream
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried paprika
  • Salt and black pepper to taste
  • 2 tablespoons All-purpose flour
  • 2 cups Cooked white rice

Instructions

  1. Season the chicken breasts generously with salt, pepper, paprika, and half of the thyme.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown. Remove chicken and set aside.
  3. Reduce heat to medium. Add mushrooms and onion to the skillet. Cook until softened, about 5 minutes.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste.
  6. Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the pan.
  7. Stir in the heavy cream and the remaining thyme. Bring the sauce to a gentle simmer.
  8. Return the seared chicken to the skillet. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the chicken is cooked through (internal temperature reaches 165°F).
  9. Taste the sauce and adjust seasoning if needed.
  10. Serve the smothered chicken and generous amounts of gravy over beds of hot, fluffy rice.
