  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth

  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 1 tbsp all-purpose flour (optional, for thickening gravy)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken thighs generously with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear chicken thighs for 3-4 minutes per side until golden brown. Remove chicken from skillet and set aside.
  4. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  5. Add minced garlic and cook for 1 minute more until fragrant.
  6. If thickening, sprinkle flour over the onions and garlic, stirring for 1 minute.
  7. Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
  8. Stir in heavy cream and dried thyme. Bring to a simmer.
  9. Return chicken thighs to the skillet. Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through and tender.
  10. Season gravy with salt and pepper to taste.
  11. Garnish with fresh parsley before serving.
