1 sheet puff pastry, thawed
4 oz brie cheese, rind removed, cut into 1-inch cubes
1/4 cup whole berry cranberry sauce
1 tablespoon fresh rosemary, chopped
1 egg, beaten (for egg wash)
Sparkling sugar, for garnish
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Unfold the puff pastry sheet onto a lightly floured surface. Cut the pastry into 12 equal squares.
Place a cube of brie in the center of each pastry square.
Top each brie cube with about 1 teaspoon of cranberry sauce.
Sprinkle chopped rosemary over the cranberry sauce.
Bring the corners of each pastry square up and pinch them together to enclose the filling.
Place the bites seam-side down on the prepared baking sheet.
Brush the tops of the pastry bites with the beaten egg wash.
Sprinkle generously with sparkling sugar.
Bake for 15-20 minutes, or until the pastry is golden brown and puffed.
Let cool slightly before serving.
Notes
For a smoother cranberry topping, you can slightly mash the whole berries.
If you don’t have fresh rosemary, you can use dried rosemary, but use about half the amount.
