1 gallon unflavored Kombucha
1 cup fresh orange juice
1/2 cup fresh lemon juice
1/4 cup fresh lime juice
1/4 cup grated fresh ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
Optional: Ginger slices and citrus wheels for garnish
Instructions
Combine the unflavored kombucha, orange juice, lemon juice, lime juice, grated ginger, cinnamon, and cloves in a large, clean container.
Stir the mixture well to fully incorporate all the spices and juices.
Cover the container with a breathable cloth or coffee filter secured with a rubber band. This allows air exchange while keeping contaminants out.
Let the mixture ferment at room temperature (around 70-75°F or 21-24°C) for 3 to 7 days. Taste daily to check for desired tartness and carbonation.
Once the flavor is to your liking, strain the liquid through a fine-mesh sieve to remove the grated ginger pulp.
Pour the finished kombucha into flip-top bottles, leaving about an inch of headspace.
Seal the bottles tightly and let them sit at room temperature for an additional 1 to 3 days for secondary fermentation and carbonation. Be careful not to over-carbonate.
Refrigerate the bottles to halt fermentation. Serve chilled, garnished with fresh citrus or ginger slices if desired.
Notes
Always use clean, sanitized equipment when brewing kombucha to prevent mold growth.
If you prefer a less spicy flavor, reduce the amount of fresh ginger used.
Burp your bottles daily during the secondary fermentation period to release excess pressure.
If you are new to kombucha brewing, start with a shorter secondary fermentation time.
