  • 1 1/2 cups chopped pecans

Instructions

  1. Prepare the crust: Combine flour and salt in a bowl. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water one tablespoon at a time, mixing until the dough just comes together. Form into a disk, wrap, and chill for 30 minutes.
  2. Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a mini muffin tin.
  3. Roll out the chilled dough thinly. Use a round cutter slightly larger than the muffin cups to cut out circles. Gently press the dough circles into the prepared muffin cups to form small shells.
  4. Make the filling: In a separate bowl, whisk together corn syrup, brown sugar, eggs, vanilla extract, cinnamon, and nutmeg until smooth.
  5. Stir the chopped pecans into the filling mixture.
  6. Spoon the pecan filling evenly into the dough-lined muffin cups. Do not overfill.
  7. Bake for 18 to 20 minutes, or until the filling is set and the crust edges are golden brown.
  8. Let the bites cool in the pan for 10 minutes before carefully removing them to a wire rack to cool completely.
