Spicy Corn Riblets, also known as Mexican street corn, are a fun and flavorful TikTok-famous appetizer perfect for any cookout. These corn quarters are seasoned with a delicious blend of spices and topped with cotija cheese, offering a perfectly charred and juicy bite.

  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt to taste
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat your grill to medium-high heat.
  2. Cut each ear of corn lengthwise into quarters to create ‘riblets’.
  3. In a small bowl, mix together olive oil, chili powder, smoked paprika, cumin, cayenne pepper (if using), and salt.
  4. Brush the corn riblets generously with the spice mixture, ensuring they are well coated.
  5. Place the corn riblets on the preheated grill.
  6. Grill for about 8-10 minutes, turning occasionally, until the corn is tender and slightly charred.
  7. Remove the corn riblets from the grill.
  8. Sprinkle the grilled corn with crumbled cotija cheese and chopped cilantro.
  9. Serve immediately with lime wedges on the side.

Notes

  • For extra heat, add more cayenne pepper.
  • If you don’t have cotija cheese, feta cheese can be used as a substitute.
  • These are best enjoyed fresh off the grill.
