4 large eggs
4 large flour tortillas
1/2 cup refried black beans
1/4 cup salsa roja (spicy)
1/4 cup shredded Monterey Jack cheese
2 tablespoons chopped cilantro
1 tablespoon vegetable oil
Salt and pepper to taste
Instructions
Heat the vegetable oil in a non-stick skillet over medium heat.
Crack the four eggs into the skillet. Cook them over easy or to your preferred doneness. Season lightly with salt and pepper.
Warm the tortillas in a dry pan or microwave until pliable.
Lay a tortilla flat. Spread 1/4 of the refried beans down the center.
Top the beans with one cooked egg.
Spoon 1/4 of the spicy salsa roja over the egg.
Sprinkle with Monterey Jack cheese and cilantro.
Fold in the sides of the tortilla, then roll tightly from the bottom to create a burrito.
Repeat for the remaining three burritos. Serve immediately for a protein-packed breakfast.
