  • 2 ears of corn, husked
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1/4 cup crumbled cotija cheese
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1-2 jalapeños, finely chopped (seeds removed for less heat)
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon lime juice
  • Hot sauce, to taste
  • Salt, to taste

Instructions

  1. Grill or boil the corn until tender and slightly charred.
  2. While the corn is cooking, mix together mayonnaise, sour cream, chili powder, smoked paprika, cayenne pepper, and chopped jalapeños in a bowl.
