1 tablespoon olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach, thawed and squeezed very dry
1 (14 ounce) can artichoke hearts, drained and roughly chopped
4 ounces cream cheese, softened
1/2 cup sour cream
1 cup shredded Monterey Jack cheese, divided
1/2 cup shredded Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
8 large flour tortillas
1 tablespoon butter or cooking spray
Instructions
Heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes.
Add garlic and cook for 1 minute more until fragrant.
In a medium bowl, combine the squeezed dry spinach, chopped artichoke hearts, softened cream cheese, sour cream, 1/2 cup of the Monterey Jack cheese, Parmesan cheese, salt, and pepper. Mix well.
Spread the spinach mixture evenly over one half of each of the 8 tortillas. Sprinkle the remaining 1/2 cup Monterey Jack cheese over the filling.
Fold the empty half of each tortilla over the filling to create a half-moon shape.
Heat a large skillet or griddle over medium heat. Lightly butter or spray the surface.
Place one or two quesadillas on the hot surface. Cook for 3 to 4 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese is melted and gooey.
Remove from the skillet, let cool slightly, and slice into wedges. Serve immediately.
Notes
Squeeze all excess water from the thawed spinach. This prevents a watery filling.
If you prefer a tangier flavor, substitute plain Greek yogurt for the sour cream.
Serve with salsa, guacamole, or extra sour cream for dipping.
